Teaching Research
Improving training and education in nutrition and dietetics. As a graduate student at East Carolina University I focused on educational research related to the didactic training of Registered Dietitians. My experiences with education research include both qualitative (2015) and quantitative (2013) methodology. Through our research on case-based learning in nutrition education we found that case studies enable students to emulate professional (future) practice in the classroom setting and feel better prepared for professional settings because of this educational modality (see Figure 4). Now an Instructor in the Department of Nutrition Sciences at The University of Alabama at Birmingham, I utilize these findings by integration of case-based learning to educating and training our graduate students as a simulated learning experience.

Figure 4: "Theoretical practice pathways of professional competency skill gains that accompany case-based learning created from focus group discussions among upper-level undergraduate nutrition and dietetics students after their first and semester-long exposure to this method of problem-based learning. Darkening of color and thickening of arrows denote increased level of topic involvement, dashed circle and arrow denotes how this experience impacted professional skills development."
