I was pleasantly surprised at how much I enjoyed the content, and there was a good balance of projects and quizzes. Even though she was getting married at the end of the semester, she still prepared thoroughly for her absence and I felt prepared to tackle the assigned project."

Even though Ms. Harman got married towards the end of the semester, she was still incredibly organized - she sent out announcements each week about what to expect, and her assignment instructions were always very thorough and clear. Ms. Harman is very inviting, and genuinely wants her students to succeed! She is very knowledgeable about food service and operations, and is timely with her email responses as well as any and all questions that students have throughout each module. Overall, I would be excited to have Ms. Harman again through-out my time in the DEP-C program!"

"Mrs. Kelly is an excellent instructor. She really helped me gain a better understanding on topics that I don't have much experience with. She made time to work with me one-on-one and was always quick to respond back to my questions and concerns. Her exams and the course workload were fair and I appreciated have a few weeks of less work while I was doing my clinical rotation."
"Professor Harman is an exceptional professor and educator. She is extremely enthusiastic about nutrition and dietetics, which is evident during class meetings, and lecture / instructional videos! Professor Harman is always extremely responsive / accessible when you have a problem - she always grades assignments and responds to emails promptly (usually within 24 hours) which majorly helps when completing projects / assignments on time. Also, it was very impressive that she stayed on top of grading while she got married this semester! Professor Harman is extremely empathetic, approachable, and personal, but also sets the standard high for her students. That being said, she never keeps us guessing, and always keeps rubrics, instructions, and expectations easy to follow and clear. It is very clear that Professor Harman takes the time to neatly write out her assignment instructions. Professor Harman takes a genuine interest in our achievements and experiences as aspiring Registered Dietitians. Overall, I honestly have nothing negative to say about Professor Harman - I always look forward to taking her classes!"
"I really enjoyed this course. I felt like it was set up super well and had a great, straight forward structure. I found the lectures informative and helpful in learning the material but not too long. I also found the additional assignments manageable. The time I spent on this course each week was definitely doable. I felt like I learned more from this course than I have from a lot of courses I've taken in this program because of how informative the lectures were and how helpful the assignments were to add to my learning. The only assignment I would recommend adjusting would be the group project we had to do for food relief. It was pretty hard to do this project in a group setting. I would say this should be an individual project, with less work, or should be a group project with a structure on how to divide up the work."
"Mrs. Kelly is an excellent professor, who is very detailed and communicative with her course outlines. We always know what to expect and when it is expected. While the group assignments can be cumbersome, they are ultimately a valuable exercise in collaborating with others and learning other perspectives that you may not have thought of yourself. My only critique is that Mrs. Kelly is arguable too lenient of a grader, and could be a little "tougher" with her grading to reflect graduate level standards and expectations of work."

She's very direct and straight-forward which helps to understand the topics being presented more easily."

"Ms. Harman is an excellent teacher who genuinely cares about the success of her students. I appreciated how she chose a variety of activities for students, including individual projects that helped us use our design/creativity and case study team projects that helped us critically think on situations we will probably encounter as RDNs while building team work skills. All lecture content was helpful and applicable to assignments, and the exams were directly related to work done in the class. In particular, I really appreciated how she provided the lecture transcripts, since I used these for studying purposes. "Today's presentation was great. Ms. Harman did a great job on digesting food insecurity and providing us with examples on being food insecure. Redesigning Blazer Kitchen was a great idea. Many students do not go into Blazer Kitchen because they are afraid that they will be judged as being poor or not having any money. I learned a lot from this presentation."
"Presentation was very informative by stating what food insecurity is. I also liked the $150 grocery budget that was shown. I'd like to see it possibly scaled down for a college students budget."
"From today's guest lecture I was able to understand more about the food pantry at UAB and how lack of funds can contribute to the obesity epidemic. Due to shortage in funds, many people consume cheap and what is considered "bad foods" because it is affordable. The huge question is, what can be done to make sure that those who are associated with low income families/households receive proper nutrients while making sure it is affordable/cost effective for all?"
"Listening to the concerns of the 'Choose MyPlate' topic during Tara's presentation made me think that more options should be available to better help people understand how eating healthier could contribute to healthier lifestyles and benefits. The 'Choose MyPlate' chart should be displayed with recipes or meal tips for low budgets and some high budget families/group events. The recipes should fit the 'Choose MyPlate' recommendations for portion sizes but it should also provide tips on how to make/tweak the recipes to fit certain food allergies, etc."
